Executive Chef Peter Edwards leads the culinary vision at
Bel-Air Bay Club with a philosophy rooted in seasonality,
global inspiration, and refined technique. Australian-born and
of Greek descent, Chef Peter brings more than two decades
of experience across award-winning kitchens and AAA Five
Diamond resorts. His culinary journey reflects a deep respect
for ingredient integrity, thoughtful sourcing, and the balance
of flavor and presentation.
Drawing from classic French foundations layered with
Mediterranean and Asian influences, Chef Peter creates
menus that feel both contemporary and timeless. California’s
rich agricultural landscape serves as his primary inspiration,
highlighting peak-season produce, fresh coastal seafood, and
carefully selected proteins. Beyond technique, his approach
is deeply personal. From the first hors d’oeuvre to the final
course, each dish is crafted to enhance the rhythm of the
evening and complement the oceanfront setting, creating a
dining experience that feels polished, inviting, and memorable.
COCKTAIL HOUR
Cocktail hour at Bel-Air Bay Club serves as a lively and

A typical arrangement includes four to five tray-passed
selections paired with one or two stationary displays, allowing
